As the products from partially hydrogenation, monounsaturated fatty acids, such as elaidic acid (trans-C18:1, n-9) and oleic acid (cis-C18:1, n-9), are the abundant fatty acids in PHVO [21].

The cardio-protective effect of PUFA was first postulated in the 1950s (Sinclair, 1956). Scientists observed that Alaskan and Greenlandic Eskimos and Okinawa islanders had a reduced incidence of CVD and other chronic diseases than other groups because of their high consumption of fish and marine mammals, both being rich in n-3 LC-PUFA (Bang, Dyerberg, & Sinclair, 1980; Kagawa et al., 1982).

Since in 1956 Sinclair described a relationship between a high fat diet rich in marine omega-3 fatty acids of a Greenland Eskimo population and low incidence of coronary artery disease, there is an increasing interest in polyunsaturated fatty acids (PUFA) [1–3]. Consecutively, numerous studies on basic research revealed manifold mechanisms and molecular actions of these long chain carbons with their characteristic double bonds.
